Order, and how to fix it
Pages come out in the order shown in the list, and each image can be moved up or down before converting. Files added later join the end, so adding in batches is a quick way to build an order without dragging: the January photos, then February, then March.
A whole folder selected at once arrives in whatever order the file picker hands it over, which is usually name order and is not always the order you meant — camera files named IMG_9 and IMG_10 sort with 10 before 9 in a plain text comparison. Check the list before converting; that is what it is there for.

Mixed sizes and orientations
Images of different shapes can be mixed freely. Each is scaled to fit the page while keeping its proportions, so a portrait photo and a landscape one both fit, each leaving white space on whichever sides do not fill.
The page size and orientation you pick apply to every page. There is no per-image setting, which means a set that is mostly landscape is best converted in landscape even if one or two portraits end up with wide margins.
For a set that is genuinely half and half, portrait with a small margin usually looks least awkward, because a portrait page still gives a landscape image its full width.
How many, and how large
There is no limit on the number of images. The work runs on your own machine rather than a server, so there is no queue and no free-tier ceiling.
Size is the thing to watch instead. Every image is embedded in the document, so a PDF of forty phone photographs is tens of megabytes — the PDF is roughly the sum of the images inside it. Lowering the quality reduces that, and for photographs it can be lowered a long way before anything shows.
